Ingredients

  • 600 grams egg noodles
  • 300 grams chicken breast
  • 100 grams chicken fat
  • 200 grams chicken bones
  • 14 cloves of garlic
  • 4 spring onions
  • 3 cm ginger
  • 4 tablespoons of sesame oil
  • 4 teaspoons of bouillon powder
  • salt
  • white pepper powder
  • 6 teaspoon of soy sauce
  • 4 tablespoons of cooking oil
  • 2.6 liters of water
  • fried shallots

How to Cook

Preparing the topping

Boil 600 ml of water. Add chicken breast, 3 cloves of garlic, ginger, and 1 teaspoon of salt. Cook for 20 minutes then drain.
Shred the chicken in the food processor.
Mince 4 cloves of garlic.
Add shredded chicken, 2 tablespoons of sesame oil, half a teaspoon of white pepper powder, half a teaspoon of salt, and one teaspoon of bouillon powder. Stir until the chicken gets dry.

Preparing the chicken fat

Mince 5 cloves of garlic.
Place chicken fat in the pan, and add minced garlic.
Stir until the garlic gets brown.
Strain the oil from the garlic.
Chicken fat lasts long for two weeks or more.

Preparing the broth

Boil chicken bones, 2 cloves of garlic, spring onions, 1 teaspoon of salt, and 2 teaspoons of bouillon powder with 1.5 liters of water.
Cook for 1 hour.

Preparing the noodles

Boil 500 ml water.
Add the noodles, cook for 5 minutes then drain.

Add one pinch of salt, two teaspoons of soy sauce, one tablespoon of chicken fat, and a pinch of white pepper powder to the bowl and mix.

Add 200 grams of noodles to the bowl and mix.

Add chicken topping and fried shallot.

Cwie mie is ready to serve with the broth.

This recipe is for 3 portions of Cwie Mie. The broth recipe can replace the bones with chicken feet or beef bones. And you can add chili sauce for the spiciness.
