Gulai Kambing

Ingredients

  • 500 grams of goat meat
  • 10 shallots
  • 6 cloves of garlic
  • 6 big red chilies
  • 4 candlenuts
  • one teaspoon of cumin
  • 5 cm turmeric
  • 1 cm ginger
  • half teaspoon of nutmeg powder
  • one teaspoon of coriander seeds
  • 3 cm cinnamon
  • 4 bay leaves
  • 3 kaffir lime leaves
  • 2-star anise
  • 1 lemongrass
  • 2 teaspoons of salt
  • 4 teaspoons of bouillon powder
  • 1 teaspoon of sugar
  • 150 ml instant coconut milk
  • 1.6 liter of water

Cut the goat meat into small pieces.

Boil 700 ml of water and add beef into the water. Cook for 20 minutes and drain.

Place shallots, garlic, big red chilies, candlenuts, cumin, turmeric, ginger, nutmeg powder, coriander seeds, and cinnamon in a food processor and process into a paste.

Heat cooking oil in the wok, add the spices paste, bay leaves, kaffir lime leaves, star anise, lemongrass and stir for 10 minutes.

Add goat meat and water, cook for 15 minutes.

After 15 minutes add coconut milk, salt, bouillon powder and sugar.

Cook for another 30 minutes and Gulai Kambing is ready to serve.
