Krengsengan Kambing
This recipe contains fermented shrimp paste, if you are allergic to seafood you can replace it with vegan fermented shrimp paste or skip the fermented shrimp paste.

Ingredients
- 500 gram goat meat
- 10 shallots
- 5 cloves of garlic
- 1 cm ginger
- 3 chilies
- 3 big red chilies
- 1 tomato
- 2 tablespoon of petis (fermented shrimp paste)
- 1 lemongrass
- 3 bay leaves
- 3 tablespoon of sweet soy sauce
- one teaspoon of salt
- 20 ml cooking oil
- 250 water.
How to Cook

Cut the goat meat into 4cm cube.

Place shallots, garlic, ginger, chilies in a food processor and process into a paste.

Slice this big red chilies and cut tomato in 4 pieces.

Heat cooking oil in the wok. Add the spices paste, bay leaves, lemongrass and stir for 10 minutes.

Add goat meat, water, petis, salt, sweet soy sauce. Stir and cook for 20 minutes.

Add tomato and big red chilies, cook for another 15 minutes.

Krengsengan Kambing is ready to serve with rice and fried shallots as a garnish.
