Sambal Bongkot is one of the Balinese sambals, this side dish is not the most popular one but this sambal is flavorful and has good aromatic from the kecombrang.

- 4 chilies
- 7 shallots
- 3 cloves of garlic
- 1 lemongrass
- 2 young stems kecombrang
- half cut of lime
- one teaspoon of shrimp paste
- 3 pinch of salt
- 5 tablespoons of coconut oil
How to Cook
Slice this young stems kecombrang.
Kneat kecombrang with a pinch of salt then wash with water.
Slice thin shallots and garlic.
Slice the chilies.
Heat coconut oil. Add shallots, garlic, kecombrang, lemongrass, shrimp paste, and two pinches of salt.
Stir for 5 minutes and add lime juice.
Sambal Bongkot is ready to serve.
