Tongseng Kambing

Ingredients

  • 500 gram lamb/goat meat
  • 100 gram cabbage
  • 7 shallots
  • 6 cloves of garlic
  • 3 candlenuts
  • 3 chilies
  • 2 big red chilies
  • 1 cm ginger
  • half teaspoon of nutmeg powder
  • one teaspoon of white pepper
  • one teaspoon of coriander seeds
  • one teaspoon of salt
  • one teaspoon of bouillon powder
  • 4 bay leaves
  • 2 tablespoon sweet soy sauce
  • 70 ml instant coconut milk
  • 650 ml water
  • 30 ml cooking oil
  • 3 tablespoon fried shallots.

How to Cook

Boil the water and add the lamb. Boil for 15 minutes then drain.

Place shallots, garlic, candlenuts, chilies, big red chilies, ginger, nutmeg, white pepper, and coriander seeds in a food processor and process into a paste.

Heat cooking oil in the wok. Add the spices paste, and bay leaves. Stir for 10 minutes.

Add the lamb, and 150 ml water.

After 10 minutes add coconut milk, salt, bouillon powder, and sweet soy sauce. Stir.

Add cabbage after 30 minutes and cook for 5 minutes more.

Tongseng Kambing is ready to serve and add fried shallots as garnish.
