Babi Rica Rica

This dish is originally from Manado North Sulawesi and this recipe is spicy and delicious.

Ingredients

  • 500 grams pork
  • bunch of Thai basil
  • 7 shallots
  • 3 cloves of garlic
  • 5 candlenuts
  • 5 big red chilies
  • 5 chilies
  • 3 cm turmeric
  • 1 cm ginger
  • 2 cm galangal
  • 1 tomato
  • 1 lemongrass
  • 1 teaspoon of salt
  • 2 teaspoons of bouillon powder
  • 30 ml cooking oil
  • 250 ml water

How to Cook

  1. Cut the pork into cubes.
  2. Place shallots, garlic, candlenuts, big red chiles, chilies, turmeric, ginger, and galangal in a food processor and process into a paste.
  3. Heat cooking oil in the wok, and add the spices paste, and lemongrass. Stir for 10 minutes.
  4. Add pork, water into the wok and stir.
  5. Add salt and bouillon powder for the flavor, and stir.
  6. Cook for 30 – 40 minutes.
  7. Add Thai basil and tomato. Stir for 5 minutes and turn off the stove.
  8. Babi Rica Rica is ready to serve.

You can always add more chilies for the spiciness.
