Urutan is a Balinese traditional sausage. This dish is usually served with rice, Babi Guling and Lawar.

Ingredients
- 1 kg minced pork
- pig intestines
- 15 shallots
- 8 cloves of garlic
- 7 cm turmeric
- 5 cm ginger
- 7 cm galangal
- 4 cm aromatic ginger
- two teaspoon of coriander seeds
- one teaspoon of white pepper
- one teaspoon of cumin
- one teaspoon of shrimp paste
- 1 teaspoon of salt
- 3 teaspoon of bouillon powder.
How to Cook

Clean the intestines.

Place shallots, garlic, turmeric, ginger, galangal, aromatic ginger, coriander seeds, white pepper, cumin, shrimp paste in a food processor and process into a paste.

Mix minced pork and spices paste.

Put the mixed minced pork into the intestine.

Tie the end of the intestine.

Urutan can be directly fried or smoked for 2-3 hours or can be dried under the sun (fermented urutan).
Smooked and dried urutan can last for 10 to 12 days.
