Babi Guling

This dish is usually served on Galungan day and one day before the silent day in Bali. It is akes hours to make Babi Guling tasty and chruncy.

  • 1 whole young pig
  • 40 shallots
  • 17 cloves of garlic
  • 10 chilies
  • 2 teaspoons of shrimp paste
  • 18 candlenuts
  • 3 lemongrass
  • 2 tablespoon coriander seeds
  • 5 cm turmeric
  • 3 cm aromatic ginger
  • 3 cm ginger
  • 6 cm galangal
  • 5 bay leaves
  • 3 kaffir lime leaves
  • 2 teaspoons of black pepper
  • 2 teaspoon sugar
  • 6 teaspoon salt
  • 100 ml cooking oil

How to Cook


Place shallots, garlic, chillies, shrimp paste, candlenuts,  coriander seeds, turmeric, aromatic ginger, ginger, galangal, black pepper  in a food processor and process into a paste.


Heat the oil in a pan, add spices paste, bay leaves, kaffir lime leaves,  lemongrass. Stir.


Add salt and sugar for the flavor. Stir for 15 minutes.


Stuff the spices into the pig cavity and sew the cavity.


Cover pig blood hole with coconut fiber.


Roast the pig for 2-3 hours until the skin change the color to golden red.


Babi Guling is ready to serve.
