Ingredients
- 500 grams beef
- 10 shallots
- 5 cloves of garlic
- 5 candlenuts
- one teaspoon of white pepper
- one teaspoon of cumin
- 3 cm turmeric
- 1 cm ginger
- 5 cm galangal
- 3 kaffir lime leaves
- 2 lemongrass
- 3 bay leaves
- 2 cardamom
- 2 cloves
- 1-star anise
- 2 teaspoons of salt
- 3 teaspoons of bouillon powder
- 20 ml cooking oil
- 750 ml water
- 100 ml instant coconut milk
How to Cook

Cut the beef into 3 cm cubes.

Boil the water and add beef into the water. Cook for 20 minutes.

Place shallots, garlic, candlenuts, white pepper, turmeric, ginger, cumin, and galangal in a food processor and process into a paste.

Heat cooking oil in the pan. Add the spices paste, kaffir lime leaves, lemongrass, bay leaves, cardamom, cloves, and star anise. Stir for 12 minutes.

Place the spices into boiled beef and stock, add salt and bouillon powder for the flavor.

After 15 minutes add coconut milk and cook for 25 minutes more.

Empal Gentong is ready to serve with rice and fried shallot as garnish.
