Kare Ayam

Kare Ayam is Indonesian chicken curry and is usually served on Eid day. This curry is not thick as Indian or Thai curry.

Ingredients
- 500-grams chicken thigh
- 100 ml coconut milk
- 6 shallots
- 2 cloves of garlic
- 3 candlenuts
- 3 cm turmeric
- half spoon of coriander seeds
- half spoon of white pepper
- 2 chilies
- 4 big red chilies
- 2 lemongrass
- 4 bay leaves
- 1 teaspoon of salt
- 2 teaspoons of bouillon
- 50 ml cooking oil
- 400 ml water
- Fried shallot
How to Cook

Place shallots, garlic, candlenuts, turmeric, coriander seeds, white pepper, chilies, and big red chilies in a food processor and process into a paste.

Heat cooking oil in the wok, and add the spices paste, bay leaves, and lemongrass. Stir for 10 minutes.

Add the chicken, salt, and bouillon powder into the wok.

Cook the chicken for 30 minutes.

Add fried shallot on top and Kare Ayam is ready to serve with rice.
