Mie Aceh

This dish is originally from Aceh, Sumatra. You can find different versions of Mie Aceh where you can replace the seafood with beef, chicken, or eggs.

    Ingredients

    • 600 grams egg noodles
    • 100 grams shrimp
    • 100 grams squid
    • 100 grams cabbage
    • 2 tomatoes
    • 8 shallots
    • 4 cloves of garlic
    • 2 chilies
    • 6 dried chilies
    • 3 candlenuts
    • one teaspoon of cumin
    • 2 cardamom
    • 2 fennel seeds
    • one teaspoon of salt
    • one teaspoon of white pepper powder
    • 3 teaspoons of bouillon powder
    • one teaspoon of sugar
    • one teaspoon of soy sauce
    • 3 teaspoons of sweet soy sauce
    • 30 ml cooking oil
    • 100 ml water
    • emping
    • pickled shallot
    • pickled cucumber

    How to Cook

    Boil 500 ml water.
    Add the noodles, cook for 5 minutes then drain.

    Place shallots, cloves of garlic, chilies, dried chilies, candlenuts, cumin, cardamom, fennel seeds in a food processor and process into a paste.

    Heat cooking oil in the wok. Add the spices paste, tomatoes and stir for 10 minutes.

    Add shrimp and squid, and stir for 10 minutes.

    Add water, noodle, cabbage, soy sauce, sweet soy sauce, salt, white pepper powder, sugar, bouillon powder, and stir. cook for another 10 minutes.

    Mie aceh is ready to serve with emping, pickled shallot and cucumber.

    This recipe is for 3 portions and you can add more chili for the spiciness.
